A JOURNEY
OF THE SENSES
IN GALLURA

THE RUSTIC CHARMS OF THE GALLURA REGION OF NORTH-EAST SARDINIA JUST A STONE'S THROW FROM THE COSTA SMERALDA,
A RURAL PARADISE THAT'S FULL OF AUTHENTIC FLAVOURS

Follow the rich aromas of spit-roast suckling pig slowly turning over an enormous bed of fragrant embers… Eat outside in the shade of an old carob tree, or inside beside the fireplace. Enjoy flavours as traditional as the fieldstone farmhouse building in its lush setting, with its fruit and vegetable garden and the cattle grazing in a nearby meadow. La Colti is a working farm, a country inn, a way of life, an experience.

À LA CARTE OR TASTING MENU?

We love to regale our guests with simple, tasty dishes prepared according to family traditions. Our hospitality begins with genuine antipasti and continues with local specialities made from the season's freshest ingredients, grown and produced on our farm. We offer a selection of Sardinian and Gallura wines, and a special tasting menu that brings all the variety of local cooking to your table. Or if you'd rather eat at home, La Colti also does takeaway.

TRADITIONAL SPECIALITIES

Chiusoni

Roughly textured and packed with flavour. Chiusoni are a kind of gnocchi that's typical to the Gallura region of Sardinia. They're made from trigu saldu or ruiu (durum wheat semolina), water and salt, and served with ragù or other sauces.

Mazza Frissa

“Soft as a belly, even after frying”. Mazza Frissa is a peasant dish that's traditionally eaten as a cold lunch by agricultural workers. It's one of the most emblematic dishes of Gallura. It's made from semolina, fresh cream lu piciu, and cow's cheese. Simple and delicious.

Spit-roast suckling pig

Slow-cooked over embers in our courtyard for 4-5 hours. The skin is crispy and the meat soft and tasty. One of the most emblematic dishes of Sardinian cuisine, prepared in the most authentic manner.

Suppa Cuata

Traditionally served on festive occasions such as a li coi, Sardinian weddings. Suppa Cuata is a rustic soup made from stale bread, beef stock, cow's cheese, parsley and cinnamon. It's rich and gooey on the inside, with a golden crust on the outside.

Acciuledi e meli

Once found only during Carnival, this confectionery treat is now enjoyed all year round. Twists of pasta violada (a pastry made from semolina, water, eggs and lard), fried and tossed in honey and orange peel. The perfect way to round off a perfect meal.

Liquore di mirto

Made from ripe myrtle berries picked by hand during winter. The berries are infused in alcohol, then pressed and the resulting juice blended with a syrup of water and sugar. Sardinia's world-renowned digestivo is served here in its most authentic version.

THE FARM

THE VALUE OF SUSTAINABLE PRODUCTION

From farm to table. Every ingredient in our recipes is produced and processed by hand here at La Colti: cured meats, olives, oil, homemade pasta, bread, sweets, liqueurs, and the finest beef and pork. All these specialities are available from our restaurant. And you can take a course in country cooking and repeat the experience at home!
